This is a very simple mouth watering recipe.
Ingredients:
1 x Onion (chopped)
1 x 270ml light coconut milk
1 x 270ml satay sauce
600grams chicken breast
Curry powder
Turmeric powder
Sugar and salt
Process:
1. Cut chicken breast into thin fillet strips
2. Marinate meat with 2 teaspoons of curry powder and 2 teaspoons of turmeric powder, few pinches of salt and sugar, mix all well.
3. Place chicken meat into air fryer.
4. Start cooking one side of the chicken at 160 degrees for 10 minutes
5. Then turn the meat and cook for further 6 minutes at 200 degrees.
6. While the above is happening, prepare satay sauce.
7. Brown chopped onion in the saucepan with 1 tablespoon of oil.
8. Add satay sauce, stir well for 5 minutes
9. Add coconut milk, stir for 5 more minutes. Sauce is all done.
10. When air fryer is done cooking the chicken (note the meat is really juicy and moist on the inside cooking this way, way better than using fan forced oven)
11. Pour satay sauce onto the cooked chicken.
This dish is a stir fry dish. After air frying the following ingredients, combine them in a wok.
- Mushroom. Coat lightly with rice bran oil. Air fry for 10 minutes at 180 degrees.
- Potato and carrot. Coat lightly with rice bran oil. Air fry for 15 minutes at 180 degrees.
- Marinated chicken thighs. Spray a coat of rice bran oil, air fry for 15 minutes at 200 degrees. They won't be fully cooked, that's alright as I will cook them further when combining with mushroom, potato and carrot. Chicken thighs are marinated with: Teriyaki sauce, sugar, vinegar and minced chilli.
- When ingredients from steps 1,2 and 3 are done, heat up a wok with 2 table spoons of oil, add 1 chopped onion, let onion become brown before adding garilc and spring onions.
- When you can smell the fragrance from onion and garlic, add in chicken from step 4, cook for 5 minutes on medium heat.
- Add into work mushroom, potato and carrot from step 1,2, and 3. Stir all ingredients well and thoroughly for 5 minutes, finally add 3 tablespoons of teriyaki sauce to finish up.
