Here is a very simple tomato soup recipe done in a pressure cooker. Cooking time: 33 minutes.
Steps and ingredients:
- Two pieces of pork (any part will do). Pan fry them with a bit of oil, make sure they are browned nicely and smell amazing.
- Two carrots and one large onion. Chop them, toss into the pressure cooker, let them cook a bit using saute mode.
- Six tomatoes. Toss into the fry pan, the same pan used for browning the pork. No need to cook them for long, doing this is for getting the meat flavor into the tomatoes, don't waste those pork juice.
- Put all ingredients into the pressure cooker.
- Add 1.5 litre of water
- Add one teaspoon of salt and few pinches of ground pepper. Close the lid on the pressure cooker, make the valve is in sealed position, set timer to 33 minutes and it's that easy to cook healthy tomato soup, perfect for those chilly winter nights.
